
🧡 Story
Zaalouk is a traditional Moroccan salad made of roasted or sautéed eggplant, tomatoes, garlic, and spices. Served room temperature or warm, it’s excellent as a starter, appetizer, or side dish served with Moroccan bread.
- Ingredients :
- 2 medium eggplants, peeled and diced
- 3 ripe tomatoes, peeled and chopped
- 3 garlic cloves, minced
- 3 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- ½ tsp chili flakes (optional)
- Salt & black pepper to taste
- 2 tbsp chopped parsley or cilantro
- 1 tbsp lemon juice
- 👩🍳 Step-by-Step Instructions
- Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
- Add diced eggplants and cook for 10–15 minutes until soft.
- Stir in tomatoes, paprika, cumin, chili flakes, salt, and pepper. Cook for another 10 minutes until the mixture thickens.
- Mash slightly with a fork or spoon to create a creamy texture.
- Stir in lemon juice and chopped parsley or cilantro.
- Serve warm or at room temperature with Moroccan bread.
🍋Tips / Notes
💡 Zaalouk can be made ahead of time — flavors intensify when chilled. Add a drizzle of olive oil before serving for extra richness.
