Moroccan Zaalouk Eggplant & Tomato

🧡 Story

Zaalouk is a traditional Moroccan salad made of roasted or sautéed eggplant, tomatoes, garlic, and spices. Served room temperature or warm, it’s excellent as a starter, appetizer, or side dish served with Moroccan bread.

  • Ingredients :
  • 2 medium eggplants, peeled and diced
  • 3 ripe tomatoes, peeled and chopped
  • 3 garlic cloves, minced
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ tsp chili flakes (optional)
  • Salt & black pepper to taste
  • 2 tbsp chopped parsley or cilantro
  • 1 tbsp lemon juice
  • 👩‍🍳 Step-by-Step Instructions
  • Heat olive oil in a pan over medium heat. Add garlic and sauté for 1 minute.
  • Add diced eggplants and cook for 10–15 minutes until soft.
  • Stir in tomatoes, paprika, cumin, chili flakes, salt, and pepper. Cook for another 10 minutes until the mixture thickens.
  • Mash slightly with a fork or spoon to create a creamy texture.
  • Stir in lemon juice and chopped parsley or cilantro.
  • Serve warm or at room temperature with Moroccan bread.

🍋Tips / Notes

💡 Zaalouk can be made ahead of time — flavors intensify when chilled. Add a drizzle of olive oil before serving for extra richness.
