  • 1 cup green or brown lentils, rinsed
  • 2 carrots, peeled and diced
  • 1 zucchini, diced
  • 1 potato, diced
  • 1 onion, chopped
  • 2 tomatoes, grated or chopped
  • 2 garlic cloves, minced
  • ½ cup green beans, cut into pieces
  • 2 tbsp olive oil
  • 🌿 Spices & Seasoning:
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp turmeric
  • ½ tsp ground ginger
  • ¼ tsp cinnamon (optional)
  • Salt & pepper to taste
  • 4 cups vegetable broth or water
  • Fresh parsley or cilantro for garnish

  • Heat olive oil in a tagine or large pot over medium heat.
