This Moroccan Chicken & Apricot Tagine brings together tender chicken with sweet apricots, almonds, and aromatic Moroccan spices. Low and slow cooking gets it tender and just perfect, a beautiful balance of savory and sweet — ideal for special occasions or holiday entertaining.

  • Ingredients :
  • 🐓 For the Tagine:
  • 1 whole chicken, cut into pieces (or 1kg chicken thighs)
  • 2 onions, sliced
  • 2 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1 tsp paprika
  • ½ tsp turmeric
  • Salt & pepper to taste
  • 250g dried apricots
  • 50g blanched almonds, toasted
  • 1 tbsp honey
  • 1 cup water or chicken broth
  • Fresh cilantro or parsley (for garnish)
  • 👩‍🍳 Step-by-Step Instructions
  • Heat olive oil in a tagine or deep pan over medium heat.
  • Sauté onions and garlic until fragrant and softened.
  • Rub chicken pieces with spices, then add to the tagine and brown lightly on all sides.
  • Add water or broth, cover, and simmer for 25–30 minutes.
  • Add apricots and honey, continue simmering for another 15 minutes until chicken is tender and sauce is thickened.
  • Garnish with toasted almonds and chopped parsley before serving.

🍋Tips / Notes

💡 For a richer flavor, soak dried apricots in warm water for 10 minutes before cooking. Serve with Moroccan couscous or warm bread to soak up the sauce.
