This Moroccan Chicken & Apricot Tagine brings together tender chicken with sweet apricots, almonds, and aromatic Moroccan spices. Low and slow cooking gets it tender and just perfect, a beautiful balance of savory and sweet — ideal for special occasions or holiday entertaining.
- Ingredients :
- 🐓 For the Tagine:
- 1 whole chicken, cut into pieces (or 1kg chicken thighs)
- 2 onions, sliced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp paprika
- ½ tsp turmeric
- Salt & pepper to taste
- 250g dried apricots
- 50g blanched almonds, toasted
- 1 tbsp honey
- 1 cup water or chicken broth
- Fresh cilantro or parsley (for garnish)
- 👩🍳 Step-by-Step Instructions
- Heat olive oil in a tagine or deep pan over medium heat.
- Sauté onions and garlic until fragrant and softened.
- Rub chicken pieces with spices, then add to the tagine and brown lightly on all sides.
- Add water or broth, cover, and simmer for 25–30 minutes.
- Add apricots and honey, continue simmering for another 15 minutes until chicken is tender and sauce is thickened.
- Garnish with toasted almonds and chopped parsley before serving.

💡 For a richer flavor, soak dried apricots in warm water for 10 minutes before cooking. Serve with Moroccan couscous or warm bread to soak up the sauce.
