Bissara is a hearty Moroccan soup made from dried fava beans, flavored with garlic, olive oil, and spices. Traditionally eaten as a comforting breakfast or starter, it’s simple, wholesome, and deeply comforting — a true Moroccan classic.

  • Ingredients :
  • 2 cups dried fava beans (or split peas)
  • 4 cups water or vegetable broth
  • 3 cloves garlic, minced
  • 3 tbsp olive oil
  • 1 tsp ground cumin
  • ½ tsp paprika (optional)
  • Salt & pepper to taste
  • Lemon wedges (for serving)
  • Chopped parsley for garnish
  • 👩‍🍳 Step-by-Step Instructions
  • Soak the dried fava beans in water overnight (if using dried whole beans). Drain and rinse.
  • In a pot, combine fava beans, water or broth, and garlic. Bring to a boil, then simmer for 45–60 minutes until beans are very soft.
  • Mash the beans using a hand blender or fork until smooth. Add more water if needed to reach a creamy consistency.
  • Stir in olive oil, cumin, paprika, salt, and pepper. Simmer for another 5 minutes.
  • Serve hot, drizzled with extra olive oil, garnished with parsley, and with lemon wedges on the side

💡 Bissara is traditionally eaten with Moroccan bread for dipping. You can adjust the consistency — thicker for spreading or thinner for soup.
