Traditionally consumed at Ramadan to break the fasting, Harira is a rich broth of lentils, chickpeas, tomatoes, and fresh herbs that is spiced.
This comforting meal provides energy after a day of fasting and is typically served with dates, boiled eggs, and honey sweets like chebakia.
Every family puts their own spin on it, but the comfort and love in every bite remain.
- Ingredients (serves 6–8):
- 250 g lamb or beef, cut into small cubes (optional for a vegetarian version)
- 2 tbsp olive oil ([pure Moroccan olive oil → affiliate link])
- 1 large onion, finely chopped
- 2 celery sticks, chopped
- 1 small bunch fresh parsley, chopped
- 1 small bunch cilantro (coriander), chopped
- 3 ripe tomatoes, peeled and blended
- 2 tbsp tomato paste
- ½ cup lentils
- ½ cup soaked chickpeas (or canned)
- 1 tsp turmeric
- 1 tsp ginger powder
- ½ tsp black pepper
- Salt to taste
- 2 L water or broth
- ½ cup vermicelli noodles
- 2 tbsp flour, mixed with ½ cup water (for thickening)
- Juice of ½ lemon

- In a large pot, heat olive oil and add meat (if using), onion, celery, parsley, and cilantro. Sauté for 5 minutes.
- Add blended tomatoes, tomato paste, spices, and chickpeas. Stir well.
- Pour in water or broth, bring to a boil, then cover and simmer for 45 minutes.
- Add lentils and continue cooking for 20–25 minutes until soft.
- Stir in vermicelli noodles and cook for another 5–10 minutes.
- Mix flour and water into a smooth paste, then slowly add it to the soup while stirring until slightly thickened.
- Adjust seasoning, drizzle with lemon juice, and serve hot.
