Tomato & Pepper Moroccan Salad (Taktouka)

🧡 Story

Taktouka is a warm spicy Moroccan salad made of roasted green peppers, tomatoes, and scented olive oil. Simple but very flavorful, it is accompanied by bread as an appetizer or a side dish and is representative of the heart of Moroccan home cooking.

  • Ingredients :
  • 2 large green bell peppers
  • 3 ripe tomatoes, peeled and chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • ½ tsp ground cumin
  • Salt and pepper, to taste
  • Fresh parsley or cilantro, chopped (for garnish)
  • 👩‍🍳 Step-by-Step Instructions
  • Roast the green peppers over an open flame or in the oven until the skin blisters. Peel, deseed, and chop them.
  • Heat olive oil in a pan, add garlic, and sauté for 1 minute.
  • Add tomatoes, paprika, cumin, salt, and pepper. Cook until the tomatoes soften and the mixture thickens.
  • Add the roasted peppers and continue cooking for 5–7 minutes.
  • Garnish with chopped parsley or cilantro and serve warm or at room temperature.

🍋Tips / Notes

💡 Taktouka is delicious both warm and cold. For extra flavor, drizzle with a little extra virgin olive oil before serving.
