This Spicy Moroccan Carrot & Chickpea Salad is bursting with color and flavour. It contains tender carrots, chickpeas loaded with protein, and spicy Moroccan spices — all tossed in a cool lemon dressing. Serve hot or cold as a light starter or side dish.

- 🥗 Salad Ingredients:
- 3 large carrots, grated or thinly sliced
- 1 cup cooked chickpeas (or canned, drained)
- 2 tbsp olive oil
- 1 garlic clove, minced
- 1 tsp ground cumin
- ½ tsp paprika
- ¼ tsp cayenne pepper (optional)
- Juice of 1 lemon
- Salt & pepper to taste
- 2 tbsp chopped parsley or cilantro
- 👩🍳 Step-by-Step Instructions
- In a pan, heat olive oil over medium heat. Add garlic, cumin, paprika, and cayenne. Stir for 30 seconds to release the aroma.
- Add carrots and sauté for 2–3 minutes until slightly softened.
- Add chickpeas, lemon juice, salt, and pepper. Mix well and remove from heat.
- Let cool slightly, then stir in chopped parsley or cilantro.
- Serve warm or chilled with Moroccan bread or alongside grilled meats.
🍋Tips / Notes
💡 For extra flavor, sprinkle toasted sesame seeds or drizzle a bit of harissa sauce before serving. This salad also keeps well in the fridge for up to two days.
