Golden, crispy, and filled with almond paste — Moroccan Almond Briouats are sweet pastries that are usually served during Ramadan and celebrations. Their honey and nut sweet combination has resulted in them becoming one of the most favorite desserts in Morocco.

  • Ingredients:
  • 250g ground almonds
  • 100g powdered sugar
  • 2 tbsp orange blossom water
  • 1 tbsp melted butter
  • 1 tsp cinnamon
  • Brick pastry sheets (or phyllo)
  • Vegetable oil (for frying)
  • Honey (for dipping)
  • Sesame seeds (for garnish)
  • 👩‍🍳 Step-by-Step Instructions
  • In a bowl, mix ground almonds, sugar, cinnamon, orange blossom water, and melted butter to form a thick paste.
  • Cut pastry sheets into long strips (about 6 cm wide).
  • Place a small spoonful of almond filling at one end, fold diagonally into triangles.
  • Seal the edge with a bit of water or flour paste.
  • Heat oil in a pan and fry briouats until golden brown.
  • Dip immediately into warm honey, then sprinkle with sesame seeds.
  • Place on parchment paper to cool before serving.

🍋 Tips / Notes

💡 For a lighter version, you can bake the briouats instead of frying them. Serve warm with Moroccan mint tea for an authentic touch.
