This Moroccan Orange & Almond Cake is fragrant, moist, and gluten-free in its nature. Using fresh oranges, ground almonds, and a splash of orange blossom water, baked into a delicate yet rich dessert — the perfect treat for tea time or as an occasional dessert after dinner.

  • Ingredients :
  • 2 medium oranges (whole, unpeeled)
  • 200g ground almonds
  • 150g sugar
  • 4 eggs
  • 1 tsp baking powder
  • 1 tbsp orange blossom water
  • 1 tbsp honey (optional, for glaze)
  • Orange zest (for garnish)

  • Boil the oranges (whole, unpeeled) in water for 30–40 minutes until soft. Drain and let cool.
  • Cut oranges into pieces (remove seeds) and blend into a smooth purée.
  • Preheat the oven to 180°C (350°F) and grease a round baking tin.
  • In a bowl, whisk eggs and sugar until light and fluffy.
  • Add the orange purée, ground almonds, baking powder, and orange blossom water. Mix gently until combined.
  • Pour into the tin and bake for 35–40 minutes, until golden and set in the center.
  • Allow to cool before brushing with honey or orange syrup.
  • Garnish with orange zest or slivered almonds before serving.
