This Chicken & Olive Moroccan Tagine is a fragrant and flavorful meal with slow-cooked chicken and green olives, preserved lemon, and Moroccan spice blend. Traditionally cooked in a tagine, it’s wonderful for family dinners and celebration parties.

  • Ingredients :
  • 🐓 For the Tagine:
  • 1 whole chicken, cut into pieces (or 1kg chicken thighs)
  • 2 tbsp olive oil
  • 2 onions, sliced
  • 3 garlic cloves, minced
  • 1 tsp ground ginger
  • 1 tsp turmeric
  • 1 tsp paprika
  • ½ tsp cinnamon
  • Salt & black pepper to taste
  • 1 preserved lemon, quartered
  • 150g green olives, rinsed
  • 1 cup water or chicken broth
  • Fresh cilantro or parsley for garnish
  • 👩‍🍳 Step-by-Step Instructions
  • Heat olive oil in a tagine or heavy pan over medium heat.
  • Sauté onions and garlic until soft and fragrant.
  • Rub chicken pieces with spices, then add to the tagine and brown lightly on all sides.
  • Add water or broth, cover, and simmer for 25–30 minutes.
  • Add olives and preserved lemon, continue cooking for another 15 minutes until chicken is tender and sauce is aromatic.
  • Garnish with fresh cilantro or parsley before serving.

🍋 Tips / Notes

💡 For extra flavor, marinate chicken with spices and lemon for a few hours before cooking. Serve with Moroccan bread or couscous to soak up the delicious sauce.
